Ube Hopia

Ingredients

  • FIRST DOUGH
  • 1 cup bleached flour
  • 2 oz oil
  • SECOND DOUGH
  • 2 cups bleached flour
  • 4 tbsp sugar
  • 4 oz coconut cream
  • 2 oz oil
  • 1/4 tsp salt

Directions

In small bowl mix first 2 ingredients.

In medium bowl mix next ingredients.

Roll second dough into a large 1/8" rectangle. Sprinkle first dough evenly over the second dough. Roll lengthwise and refrigerate for 15 minutes.

Meanwhile portion out ube into 1 oz pieces. Remove dough from refrigerator. Cut log in half then in small equal pieces. I got about 20 - 1.25 oz.pieces.

Bake 375 for 20 minutes. Tops will be pale and bottoms will be slightly browned. Brush tops with egg wash. Return hopia to 500 degree oven for 5 minutes to brown tops.
