Gobi Masala

Once you've prepped the spices, this dish comes together in less than 30 minutes. Garnish with lemon, cilantro or cream if you like.

Ingredients

  • 1 tbsp cumin, whole
  • 1 tsp coriander, whole
  • 1 tsp garam masala, divided
  • 1 tsp salt
  • 1/4 tsp tumeric
  • 1/4 tsp black salt
  • 1" tumeric
  • 1" ginger
  • 5 garlic cloves
  • 2 bay leaves
  • whole onion, diced
  • 1 head of cauliflower florets
  • 1 cup of cabbage, sliced
  • 2 large tomatoes, sliced
  • 1 cup frozen peas
  • 1 tbsp olive oil
  • 1 tbsp clarified butter
  • 1/2 cup water or veg stock
  • black pepper

Directions

Toast cumin and coriander in a dry skillet. Grind in spice grinder.

Peel tumeric, garlic and ginger. Grind finely in spice grinder.

In a deep pot add butter, oil, bay leaves, onions, dry spices and wet spices. Add tomatoes. Add cauliflower and cabbage. Add 1/2 cup stock. Season with salt and pepper to taste. Stir in peas.
