Simple Marinara using Fresh Tomatoes & Basil by Sarah Xiong

Tomatoes are in season and this is one of the best uses for them. This recipe makes for a light and refreshing marinara, perfect for clams pasta, simmered with meat or served over rice.

Ingredients

  • 4 large vine ripened tomatoes, blanched and skinned
  • 6 cloves garlic, sliced
  • 3 tbsp olive oil
  • 1 large spring of fresh basil
  • 1 tsp salt
  • Pepper
4 servings

Directions

Put oil in pot over medium high heat.
Add garlic and let sizzle for a few seconds. Do not let it brown.
Crush tomatoes in your hands into the pot.
Add basil and simmer for 20 minutes.
