Oatmeal raisin cookies

Thick, lofty cookies. Crunchy outside, slightly crumbling inside. No need for a mixer. This recipe only requires 1 bowl and a spoon.

Ingredients

  • 3.5 oz sugar
  • 2 tbsp maple syrup
  • 1 tsp molasses
  • 3 oz coconut oil
  • 1 tbsp butter, softened
  • 1 egg
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp baking soda
  • 4.5 oz gluten free flour
  • 240 g instant steel cut oatmeal
  • 1 1/2 cup raisins
  • 1 Tbsp rum or sweet red wine
  • Water to cover raisins

Directions

Soak raisins in liquor and water. Set oven 350.

Melt coconut oil. When cool add butter, egg, sugars, salt, cinnamon and nutmeg and stir.

Add baking soda. Stir. Add flour. Stir. Add oatmeal. Stir. Add raisins. Stir.

Form into 1" balls and place on parchment lined sheet. Bake for 10 minutes in middle rack. Rotate at 8 minutes. Take out of oven and let sit for a minute. Return to oven on higher rack for 2 more minutes to crisp and color.
