Lighter rice pudding

Lighter rice pudding by Sarah Xiong

Comfort foooooood.

Ingredients

  • 2 cups sweetened almond milk
  • 1/4 c cream
  • Couple of handfuls of sugar (sorry thats how i do)
  • 1 egg, room temp
  • 1 1/2 c cooked rice

Directions

Add milk, cream, rice and sugar over low heat. Reduce til slightly thickened. Temper egg with a few scoops of hot milk. Do not allow it to boil. Keep heat low. Stir continuously til thickened.
