Oven Pancake

My mom used to make a version of this when I was little, and I LOVED it. I'm sure it was far less healthy (and probably tasted a lot better), but I love this. It's a relatively easy way to serve a hot, high protein breakfast on school days that feels special. Also known as Giant Popover, Dutch Pancake or Dutch Baby.

Ingredients

  • 4 TBS butter (or coconut oil)
  • 4 eggs
  • 1/2 c milk (or soy or almond milk)
  • 1/2 c flour (garbanzo, white, wheat)
2-4 servings

Directions

Place butter in a cast iron skillet and stick in an oven set to 400ยบ. While the butter melts and the oven heats up, put the milk & flour in the blender and mix well. Then add the eggs (and a pinch of salt if you like) and whip some more.

Be sure to blend right before pouring into the pan, otherwise the flour settles.

When the oven is hot and the butter melted (keep an eye on the butter so it doesn't burn), pour the liquid into the oven and bake for 20 mins.

This is really fun to watch with the oven light on - it puffs up like a popover (and sinks relatively fast when you take it out).

Serve w/ fruit, maple syrup, etc.
