Almond Milk

If you listen to my wife Lyn, almond milk is part of the secret to spiritual bliss. So my daughter Mila and I decided to surprise her this morning by making her a batch of it. It takes about 20 minutes to prepare once you've soaked the almonds. Have a glass then go do some sun salutations.

Ingredients

  • 1 Cup Raw Almonds
  • 1/2 teaspoon Vanilla
  • 1 teaspoon brown rice syrup
  • 3 Cups water
About 5 Glasses

Directions

Soak the almonds overnight.

Wake up happy.

While singing to yourself or listening to Built to Spill, drain the almonds and discard the soaking water.

Get out your blender or food processer and add the almonds, the 3 cups of water and the brown rice syrup. And blend away until it's a bit frothy on top.

Then pour the concoction through a tight strainer into a bowl or pitcher. If you have a cheesecloth you get extra points for squeezing it through that instead of straining.

If you don't have brown rice syrup, I also like agave nectar. Although I'd recommend using 1.5 teaspoons since it's less sweet.

Tastes great on granola and probably good on Frosted Flakes as well.
