Shitake Gohan

Super easy and healthy mushroom rice in the rice cooker. I like to eat this with grilled Japanese bbq.

Ingredients

  • Dashi stock
  • 1 piece kombu
  • Handful of bonito flakes
  • 1 garlic, smashed
  • Few slices of ginger
  • Rice
  • 1 1/2 cup Japanese medium grain rice
  • 4 shitake mushrooms, small dice
  • 2 tbsp mirin
  • 1 1/2 tbsp soy sauce
  • Scant 1/2 tsp sea salt
  • 1 tbsp sake or soju
  • 1/2 tsp honey

Directions

Put kombu, garlic and ginger in 2 cups water and heat over med low heat til simmer. Turn off heat. Remove garlic ginger and kombu. Add bonito flakes and let sit while you prepare the rice.

Rinse rice in rice cooker and drain. Add the ginger, garlic and kombu from the stock. Add soy, salt, mirin, sake and honey. Top with mushrooms. Strain bonito from the stock into the rice cooker. Liquid should be slightly below the mushrooms. Press cook.
