This recipe came to me one day while watching food network. Somehow it just clicked; I had salmon, honey, soy sauce and lemon. Plus, I was hungry! Turns out, it's a famil favorite. Matches well with plain udon or brown rice and just about any summer veggie!
Ingredients
- 1 lb salmon filet, cut into four equal pieces
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 lemon, cut into thin discs
- 2 tbsp butter, cut into 4 pats
Directions
Preheat oven to 400 (or charcoal grill)
Mix together honey & soy and use it to marinate the salmon for 15 mins.
In the meantime, lay out some aluminum foil twice as long as the salmon. Spray with nonstick spray or coat with oil. Sprinkle a little salt and crack some pepper on one half (you'll fold it over later to form a pouch.)
When salmon is done marinating, transfer it to the foil, laying it skin side down on the salt/pepper. Spread the lemon slices on top, evenly. Place a pat of butter on each piece.
Fold the foil into a pouch. Seal.
Bake for 15-20 minutes or grill for 10-15, turning once.
