Basic Sourdough

Can also be used as pizza dough

Ingredients

  • 4-5 oz starter
  • 6 oz flour
  • .15 oz whole wheat flour
  • .15 oz dark rye flour
  • 1 oz ground flax
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tbsp olive oil
  • 1.5 oz water

Directions

Mix all ingredients in stand mixer til gluten develops. Put in greased small bowl. Fold every half hour, adding more olive oil for 2 hours. Refrigerate overnight.

Take out cold. Preheat 450 with ceramic pan in oven. When 450 plop bread in oven, cover with a saucepan lid. Bake 30 minutes covered. Uncover for 10 minutes til browned.
