Matzot Brei

Ingredients

  • 3 Flats of matzot
  • 2 Tbs of chopped onions
  • 1 Large egg
  • 1 Tbs of butter or schmaltz
  • 1/4 tsp salt
  • Pepper
2 servings

Directions

In a large bowl, break up matzot into 1-2" pieces. Cover with water, making sure all the pieces are covered. Soak for 20 seconds and drain.

Crack egg over matzot, add salt and 2 twists of pepper. With fork, mix until the matzot is completely coated.

Add butter or schmaltz(rendered chicken fat) to medium hot pan. When foaming, add onions and saute until brown. Add mixture and cook for 3 minutes until egg is cooked.

Serve immediately with a pinch of salt (I like my brei on the salty side).

Now this is a breakfast!

    We usually have it for breakfast. I have family that enjoy it without the onions and with maple syrup, but I am more of a fan of this savory version. Don't be afraid of adding too much salt... saltier the better.
