I am obsessed with chopped liver. I have been experimenting with it for years. Here is my current favorite version
- 1/2 lbs of Chicken Livers
- 1/2 lbs of Calf Liver
- 2 Medium Onions Chopped
- 4 Hard Boiled Eggs
- 6 Tbs Schmaltz (rendered chicken fat)
Wash and salt the livers
Put in broiling pan and set under the broiler. Cook until done,
turning once in the cooking process. Note. It does not take much to cook livers... monitor closely. Put aside to cool.
Saute onions over medium heat in 3 Tbs of Schmaltz. When brown, put aside to cool.
In food processor, chop up all the ingredients including what is left of the schmaltz.
Salt and pepper to taste.
Serve with bread or matzot.
