Blackberry Cobbler

I found this online. Super easy and always a hit. I entered it into the Marin County Fair and picked up a 2nd place ribbon.

Ingredients

  • 1 Cup of flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 stick of butter
  • 2 1/2 cups of blackberries
  • 1 cup of sugar
6-8 servings

Directions

Heat Oven to 375

Mix blackberries with sugar in a bowl. Set aside.

Mix flour, baking powder, salt, milk in an un-greased 8 inch pan. Stir in butter until blended.

Pour blackberry mixture over batter.

Bake for 45-55 minutes.

Serve with some ice cream.

    I think that in the oven the berries sink and collapses while the batter rises.

    How does the blackberry mixture get under the batter (or how does the batter get on top) like in the picture?
