This simple and delicious salad has what you want: quinoa, avocado, and fresh corn. The end.
- 1 tbsp extra virgin olive oil
- 1 cup dry quinoa
- 1 3/4 cup water
- 1/2 red or white onion, diced
- 1 can black beans, rinsed and drained
- 1 corn, kernels only
- 1 avocado, diced
- 1/2 cup cilantro leaves, chopped
- 1/2 tsp cumin
- 1/2 tsp kosher salt
- 1 lime, juiced
In a large saute pan over medium heat, warm the olive oil. Add the quinoa and let toast for about 5 minutes, stirring occasionally.
Add water and cover. Cook 10 minutes. Remove cover. Add the rest of the ingredients and stir well.
Remove from heat and serve immediately.
