mochi squares

Ingredients

  • 8 oz Mochiko (sweet rice flour)
  • 1 cup of sugar
  • 1 cup water
  • 6 oz coconut milk
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • drops of food coloring (optional)
64 1" squares

Directions

Preheat oven to 350º.

Mix everything together until smooth. Pour into an 8" x 8" baking pan that has been lightly sprayed with vegetable oil. Cover with foil and bake for 1 hour.

Remove from oven and cool without removing the foil. Wait several hours before cutting into squares and serving. Dust with Mochiko to keep the pieces from sticking together.
