chocolate cake

This cake is the bomb. The key is using great chocolate. I like me some Scharffen Berger. And I recommend slathering it all in Milk Chocolate Frosting:

Ingredients

  • 8 oz semisweet chocolate, chopped
  • 12 tbsp butter
  • 4 eggs
  • 1 1⁄2 cups sugar
  • 1 tbsp vanilla extract
  • 1 cup buttermilk
  • 3⁄4 cup Dutch-processed cocoa
  • 1 1⁄3 cups all-purpose flour
  • 1⁄2 tsp baking soda
9x13 cake or 2 rounds

Directions

Preheat oven to 325º.

Combine chocolate and butter in a microwave-safe bowl and microwave just until the chocolate starts to melt. Stir to finish melting the chocolate.

Whisk together eggs, sugar, vanilla, and buttermilk. Add chocolate and whisk until smooth.

Sift together cocoa, flour, and baking soda. Add to the batter and stir until smooth. Pour into a greased 9 x 13 baking dish or two greased 9" rounds.

Bake on the middle rack until a toothpick inserted in the center comes out clean (about 30-40 minutes depending on the pan).

Cool before adding frosting.
