I love basil, but I rarely have enough to make pesto and I'm usually not in the mood for pasta. Ta da! Salad vinaigrette. Next time I'm going to try making this with lemon instead of vinegar.
- 1 shallot
- 1 clove garlic
- 1/2 tsp kosher salt
- 1 cup basil leaves
- 1/4 cup white wine vinegar
- 3/4 cup extra virgin olive oil
In a blender, combine all the ingredients and blend until smooth.
