baked chocolate doughnuts

This is my first pass at baked doughnuts, and they're pretty darn good. For doughnuts, they're chocolatey and moist. But these things got me wondering: is a baked doughnut just a doughnut-shaped cake? In fact, why wouldn't I just pour brownie batter in my doughnut tray and have the richest, most decadent doughnuts ever? Are doughnuts just a culturally acceptable way to start the day with dessert? Is anything shaped like a doughnut considered a doughnut? What ARE doughnuts, anyway?

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 cup sugar
  • 1/2 tsp fine kosher or sea salt
  • 1/4 tsp ground nutmeg
  • 2 tbsp butter or coconut oil
  • 1/2 cup plain yogurt
  • 1/4 cup buttermilk
  • 1 tsp vanilla extract
  • 1 egg
6 large doughnuts

Directions

Preheat oven to 350ยบ.

Sift together flour, cocoa powder, baking powder, baking soda, sugar, salt, and nutmeg. Cut in the butter or coconut oil using a pastry cutter. Set aside.

In another bowl, whisk together yogurt, buttermilk, vanilla extract, and the egg. Add to the dry mixture, stirring just enough to combine.

Fill the molds of a donut pan that has been lightly sprayed with vegetable oil. (Filling the molds can be tricky. You can use a piping bag, but I've managed to get by with spooning it in and spreading it around with the back of the spoon.) Fill each about 3/4 full.

Bake for about 10 minutes. They should spring back when touched. Let cool slightly before transferring to a wire rack.

Top with a glaze or powdered sugar when you're ready to serve them.

    Breakfast is kind of like dessert in general, which is why it's the most delicious meal... muffins, pastries, they're all just desserts, right?
