Bacon kimchi fried rice has been making the rounds, and I'm happy to have finally made it. The merits of this dish are straightforward. I'll just say that, yes, it is as delicious as it looks.

Ingredients

  • 1 tbsp canola oil
  • 2 eggs
  • 4 slices bacon
  • 1 cup chopped vegetables*
  • 1 shallot, chopped
  • 1 clove garlic, minced
  • 2 cups cold rice
  • 1 cup kimchi, chopped
  • 1 tbsp kimchi sauce
  • 1 green onion, sliced
  • fried egg (optional)
  • cilantro (optional)
  • furikake (optional)
  • * consider fresh carrots, bell peppers, corn, mushrooms

Directions

Heat oil in a frying pan or wok over medium-high heat. Crack both eggs into the pan and scramble them as they cook. Remove and set aside just before they finish cooking.

In the same pan, add the bacon and cook until brown. Remove and set aside.

In the same pan, cook the vegetables, shallot, and garlic. Once they start to brown, turn up the heat to high. Add the rice, kimchi, and kimchi sauce. Mix well, stirring occasionally to allow the rice to brown.

Turn off the heat. Mix in the egg and bacon. Transfer to a serving dish. Top with green onion. Add a little cilantro and furikake if you got it. If you're up for it, add a fried egg.
