Lemon Sauce

This recipe is the lemon sauce I use when serving my mom's Rice Pudding. The recipe as stated here is too sweet for my tastes, I add the juice of an extra lemon to tart it up a bit.

Ingredients

  • 1 cup sugar
  • 1 egg yolk
  • 1/4 cup water
  • 1/2-1 tsp lemon zest
  • 3 tbsp lemon juice
  • 2/3 cube salted butter, in slices
1.5 cups

Directions

Combine sugar and yolk with a whisk in a small saucepan. Add rest of ingredients, cook over medium heat, constantly stirring until thickened.

If you'd like to add more lemon juice to make it less sweet, do your adjusting right after all the ingredients come together, before it gets too hot. Hot sugar syrup == lava.

    We followed this recipe following the directions exactly and so much went wrong. I would like to point out if you are combining sugar and egg yolk in a small saucepan and its hot be careful that your egg does not scramble as ours did leaving small chunks of egg in the sauce. The sauce tastes terrible if tasting it hot you must let it completely cool down before adding, for example, on top of your pancakes. Once the sauce has cooled down it's quite tasty and you can taste the lemon, it's extremely sweet though but if you like it more savory the recipe does say add more lemon, I would suggest to follow this or add less sugar. I give this recipe 2/5 stars.
