Granola

Granola by hoiza

Joanie's recipe of granola was enough to make me sign up for Cookooree. I've added some other touches to it, but 80% of the recipe credit should go to her.

Ingredients

  • 2 cups rolled oats
  • 1 cup of raw almonds, roughly chopped
  • 2/3 cup of nuts & seeds (e.g. sunflower seeds, sesame seeds, flaxseeds)
  • 1/4 cup vegetable oil
  • 1/3 cup honey
  • a generous glug of maple syrup
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup raw pecans, roughly chopped

Directions

Preheat oven to 350ยบ.

In a large bowl, combine everything except for the coconut flakes and pecans. Stir until thoroughly mixed.

Line a baking pan with parchment paper; then evenly spread the granola mixture onto it.

Bake for 10 minutes. Stir thoroughly. Bake for 10 more minutes.

Stir in coconut flakes and pecans and bake for a further 10 minutes.

Cool and break up with a wooden spoon. Serve over yogurt or ice cream.
