Mini Cherry Cheesecakes

This is so easy, even I can do it. :o)

Ingredients

  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 box vanilla wafers
  • 1 can cherry pie filling
  • paper cupcake liners
12 cakes

Directions

Preheat oven to 350.

Insert a cupcake liner in each cup of a muffin pan. At the bottom of each cup, place a vanilla wafer.*

Beat cream cheese.

Add sugar and vanilla.

Once incorporated, add eggs, beating well with each egg added.

Divide the mixture between the muffin cups.

Bake for 20 minutes.

Once the mini cheesecakes have cooled, top with cherry pie filling.

*BTW, while I appreciate the simplicity of Deen's original 1 cookie per cup, I really think this recipe benefits from a more significant crust. So I would suggest crumbling the cookies and filling the bottom of the cups with a half centimeter of [pressed] cookie crumbs.

    These look awesome and so cute! I love the vanilla wafer idea. And sour cherries with rich cheesecake-- really yum.
