Coffee Cake Exceptionale

I have this set (okay a couple of sets) of recipe cards from the 70s. So this morning I decided to flip through the catalog of yellowed, curiosities for a gem to serve to the family. Well, this recipe had me at "Exceptionale" and the fact that I actually had sour cream in the fridge sealed the deal.

Ingredients

  • 3/4 cup butter, softened
  • 1-1/2 cups sugar
  • 3 eggs
  • 1-1/2 teaspoons vanilla
  • 3 cups flour
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1-1/2 cups sour cream
  • FILLING
  • 1/2 cup brown sugar, packed
  • 1/2 cup finely chopped nuts*
  • 1-1/2 teaspoons cinnamon
  • *I place the nuts in a zip-lock bag and then wrap it in a towel. Then I either pound it or roll it with something heavy like a pestle or a rolling pin.

Directions

Preheat oven to 350ยบ.

In mixer, mix butter, sugar, eggs and vanilla for a couple of minutes.

In a large bowl, sift together the remaining dry ingredients (not the filling ingredients, though).

Alternately add the dry ingredients and sour cream to the mixer.

In the bowl you just used for the dry ingredients [why dirty another bowl], mix the filling ingredients. [This is a great task for the kids because they can use their hands.]

Grease 2 loaf pans or a bundt pan.

Split 1/3 of the batter in the pan(s) followed by 1/2 of the filling.

Repeat.

Top it all off with the remaining batter.

Bake for 60 minutes or until a pick** inserted in the center comes out clean.

Cool for a few minutes before removing from the pan.

**Here's a fun tip, you can also use an uncooked piece of spaghetti to test the cake's doneness...instant super long pick -- which comes in handy when using a bundt pan.
