This is based on Momofuku's Crack® Pie. They've trademarked the name so not exactly sure what I should call this. Let me know if you have any suggestions.

I know what you're thinking. Crack Pie...that's like sooooo 2010. Well, I've had this recipe for a while now but it required you to first bake the cookies for the crust THEN MAKE the pie...and I'm just tooo lazy for that. So when my initial attempts at Toll House Chocolate Crunch Cookies ended in

Ingredients

  • CRUST
  • about 3 cups crumbled cookie for crust
  • 2 tablespoons butter
  • 1 tablespoon (3/8 ounce) brown sugar
  • pinch of salt
  • FILLING
  • 3/4 cup (5.25 ounces) sugar
  • 1/3 cup & 2 tablespoons (3.5 oz) light brown sugar
  • 1/8 teaspoon salt
  • 2 tablespoons (3/8 oz) milk powder
  • 1/2 cup (1 stick) butter, melted
  • 3/8 cup plus 1 tablespoon (100ml) heavy cream
  • 1/2 teaspoon vanilla extract
  • 4 egg yolks
  • 1 prepared crusts
  • powdered sugar, garnish

Directions

CRUST
Add all crust ingredients to a food processor and pulse until combined.

Press mixture into a 9" pie pan, forming a pie crust.

FILLING
Preheat oven to 350º.

Whisk together the sugar, brown sugar, salt, and milk powder. After a while, I felt it was easier to get my hands in there to break up the brown sugar and arrive at a unified texture.

Whisk in melted butter, then the cream, then the vanilla.

Whisk in the egg yolks -- one at a time -- taking care to not add much air.

Pour into pie shell.

Bake pie for 15 minutes. Then reduce heat to 325º and bake for another 15 minutes* until golden brown. NOTE: The filling will seem very loose -- have faith.

Remove pie and cool for a couple of hours.

Refrigerate uncovered until well chilled.

Dust with powdered sugar before serving.

*I added another 5 minutes because I'm at a higher elevation and things always seem to need a tad more time in my oven.
