So I found Nigella Lawson's version of this recipe a tad too tame for my sweet tooth. So here's my adaptation. Basically, I use 1/3 cup of sugar rather than her 1/4 cup of honey.
- 1 cup flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- pinch of salt
- 2 large mashed bananas (about 1 cup)
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla
- paper baking cups to line muffin tin
Preheat oven to 375º.
Mix dry ingredients in large bowl.
In a separate bowl mix bananas, butter, and vanilla.
Add banana mixture to the dry ingredients and mix just until moistened. Don't overmix.
Line muffin tin and split mixture between 12 muffin cups.
Bake for 25 minutes or until golden brown and a test pick comes out clean.
Remove from oven and cool in pan for 5 minutes.
