Kohlrabi Fries with Garlic Aioli

Hot, salty potato fries are delicious, as are crunchy sweet potato fries. But kohlrabi fries? Kohlrabi fries are on a totally different level of deliciousness especially paired with yummy garlic aioli!

Ingredients

  • 1. 4 medium kohlrabi (small or medium-sized have the best flavor)
  • 2. 2 TBS. melted duck fat, olive oil, melted butter or ghee, or oil of choice
  • 3. 1/2 tsp. salt
  • 4. 1/2 tsp. paprika
  • 5. For the aioli
  • 6. 2 egg yolks
  • 7. 2 garlic cloves, crushed
  • 8. 1 1/2 teaspoon Dijon mustard
  • 9. 1 tablespoon chopped fresh thyme
  • 10. 4 teaspoon lemon juice
  • 11. ¼ teaspoon kosher salt
  • 12. ¾ cup olive oil
  • 13. 1/4 cup vegetable oil
