Zongzi is a traditional Chinese food made of sweet rice, stuffed with fillings & wrapped in bamboo leaves, eaten during the Dragon Boat Festival to commemorate Qu Yuan, a poet in 300 BC who drowned himself to protect against the injustice of the era. To save his body from being eaten by fishes, the villagers carried Zongzis & rowed their boats down the river. They threw Zongzis into the water for the fish to eat in order to keep them away from Qu Yuan's body. To save the trouble of soaking & washing the bamboo leaves in making Zongzi, I made it without bamboo leaves. And, it tastes great!

Ingredients

  • 3-cups of sweet rice, washed & rinsed
  • 1-Lb of fresh peanut soak over night, rinsed
  • 6-8 dry mushrooms soak for 5 hours, rinsed, slide in pieces
  • 1/2-Lb of pork belly meat
  • Green onion wash, cut in inch section
  • Shrimp (optional), washed, peeled, cut in pieces
  • Cooking oil
  • Soy source
  • 2 cloves of garlic

Directions

1. Cook peanut until it's soft, put aside
2. Cook sweet rice in electric rice cooker follow the direction. Sweet rice needs less water than the other kinds of rice.
3. Mixed minced garlic with 1/2 cup of soy source in a bowl & put aside
4.Put pork into boiling water, pick up at 2nd boil
5. Once pork is cool off, cut it into cube
6. In medium heat to wok, pour in 1/2 cup of oil, 7. Add meat, cook & stir for 2 min.
8. Add mushroom & onion & cook for 1 min.
9. Low heat & add 1/2 cup of soy source & stir for 1 min
10. Pour in cooked sweet rice, peanuts & mix them evenly.
11. Pour in mixed garlic soy source and stir the cooked ingredients evenly & to your taste
