Apple Pie

We had a bunch of apples. I decided to make a pie. I bought the crust and the top pastry from Whole Foods, and they come in sets of two. The below recipe was supposed to be for one pie but there was so much filling I had enough for two pies! I'm not super into apple pie but this is DELICIOUS. I feel like I need to make this every day until apple season is over, it's that good!

Ingredients

  • 8 or 9 Granny Smith apples
  • 2/3 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 tablespoons lemon juice
  • 1 teaspoon lemon zest from 1 medium lemon (I used about half of this, I didn't want it to be too lemony but I definitely think the zest is one of the reasons this pie is so good)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground allspice
  • 2 frozen pie shells
  • Box of 2 sheets of frozen pastry dough

Directions

Heat oven to 450º

Peel and slice the apples. Put them in a big bowl.

Throw in all the other ingredients except the pie shell & pastry sheets. Mix it up girl! Get your hands in there and make sure everything is evenly distributed.

Divide filling into the two pie shells, then place a sheet of pastry on top of each and pinch the edges to stick the top sheet to the bottom crust. Cut ventilation holes or slits into the top sheet of dough.

Bake the pies (I put each one on its own rack) for 25 minutes; check on the pies, the crusts should be getting nice and golden. Turn the oven down to 375º and bake another 30 minutes. The filling will bubble out and fall on the floor of your stove so put a sheet of tin foil down there.

    totally going to make this with apples on our tree that are now ripe. did i mention the tree in our yard? it's an apple tree. with apples on it. you can come over and pick apples any time, but bring a motorcycle helmet b/c those bitches will take your nose off. no lie. apple pie!
