Custard French Toast

This is not a simpler way to make French Toast, but a Tastier Way.
Have patience, and you will be rewarded...

Ingredients

  • 1 Cup Half n Half
  • 3 Large Eggs
  • 2 TBLS Honey
  • 1/4 Tsp Salt
  • 8 3/4" thick slices of French, Brioche or Challah bread.
  • 4 TBLS Butter

Directions

Prep Note: you want the bread to be a little dry, cutting and leaving it out covered with a dish towel over night does nicely. You can also make the mixture the night before as well.

Place a foil covered cookie sheet with a cooling rack on top in oven.

Preheat oven to 375ºF

In a med. mixing bowl whisk (or hand mixer) Half n Half, Eggs, Honey, and Salt. It helps to heat the honey for about 10-20 seconds in a microwave so it will incorporate instead of clump on bottom.

Set out in order from your griddle, a cooling rack over a plate or foil (to help minimize the mess), a pie plate, bread.

Now preheat griddle to med-low heat.
Pour mix into pie plate.
Drop two pieces of bread in mix and let sit for 20-30 seconds, turn over and let sit another 20-30 seconds.
Now remove bread from mix and let sit on cooling rack for about 2 minutes, (this ensures the custard has time to get completely soaked in)
Now butter the Griddle and add your soaked pieces, browning nicely on either side.

Now you can start two more.

When done place on in oven on rack on top of cookie sheet for about 5 minutes.

The custard will puff up the bread (not evenly) and this is what I look for to let me know its ready. It will deflate as soon as it is removed from oven.

This should be crispy outside, custard inside.
