Salmon Fish Cakes

The fish cakes are a reminder of my childhood. Always one of my favorite meals, especially with mashed potatoes.

Ingredients

  • Wild Red Salmon Tins (about 4)
  • 1 onion
  • 1 egg
  • some almond flour (or ground bread crumbs)

Directions

1. Brown the onion slices (you can also leave the onions out of the recipe for them to be more child friendly)
2. Open the tins and lay the salmon on a plate. Only worry about taking out the small round bones and scrape off the other obvious ones. Don't worry about getting all of them, I leave the skin and most bones.
3. Mash the salmon with a fork, add the egg and almond flour(as needed to help bind the cakes), continue mashing. The texture should be a bit stiff.
4. Make little balls.
5. Saute the balls in oil or butter on low heat. Flip a few times throughout. You can also put them in the oven after you saute them to dry them out a bit.
6. ENJOY!
