If you liked my vegan shortbread cookie recipe, here’s another way to make these delicious cookies even more special and amazing.
This time we are making marble cookies! The recipe is almost the same; the only difference is that we’ll add some cocoa or cacao powder to part of the dough.

I love the combination of coconut and cacao, the kitchen smells heavenly while I’m preparing these marble cookies.
The best part is that they are completely vegan and gluten free.

Ingredients

  • ¾ cups of rice flour
  • ½ cup of oat flour
  • ½ teaspoon of baking powder
  • 1/3 cup of sugar
  • 1 teaspoon of cocoa or cacao powder
  • ½ cup of coconut milk
  • 2 tablespoons of coconut oil
  • Vanilla extract – optional

Directions

Mix the rice flour, the oat flour, the baking powder and the sugar. Transfer half of the mixture to another bowl and add the cocoa powder to it.

Put one tablespoon of coconut oil and ¼ cup of coconut milk into each bowl. Optionally, add some vanilla extract and combine everything well.

Put the mixtures in the fridge for 5-10 minutes.

Preheat your oven to 180°C (350°F).

Spread the white dough on a sheet of baking paper. Then, spread the brown dough over it and roll the new dough inwards. It doesn’t have to be perfect.

Let it chill in the fridge for 10-15 minutes.

Then, cut equal slices and roll each slice into your hands making a ball. Put the balls on a baking tray covered with baking paper and flatten it a bit.

Bake for 15-18 minutes. Let them cool down and enjoy.
