Caribbean Cornbread

Caribbean Cornbread - extremely moist with bits of corn, crushed pineapple and the perfect amount of sweetness!

Ingredients

  • 1 cup flour
  • ¾ cup yellow corn meal
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 stick butter
  • ½ cup sugar
  • 3 eggs
  • 1 (14.5 ounce) can creamed corn (11/2 cups)
  • ½ cup drained crushed pineapple
  • 4 ounces shredded Monterrey Jack cheese
  • ¼ cup canola oil, plus 2 tablespoons
