spicy fried chicken

spicy fried chicken by joanie

It was the photo. There are millions of fried chicken recipes on the Internet, but this one had a delicious looking photo from Mod Meals on Mendenhall... Maybe because the chicken was more like pieces instead of...parts? Dunno, but I went for it.

The original recipe did not specify amounts when it came to spices. I winged it and found it not spicy at all, which was fine since I wanted my kids to be able to eat it. Next time, though, I will increase the amount of cayenne, among other things.

Ingredients

  • 1 pint buttermilk
  • 1 tsp tabasco sauce
  • 1 lb chicken breasts
  • 2 cups flour
  • 1 tsp cayenne pepper
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • canola oil for frying
  • Dipping sauce:
  • 2 tbsp sour cream
  • 2 tsp sriracha
4 servings

Directions

Mix buttermilk and tabasco.

Cut chicken into strips. Soak strips in buttermilk/tabasco mixture for a few hours.

Mix flour, cayenne pepper, cinnamon, cumin, salt, and pepper. Coat chicken with flour mixture.

In a large pan with a high lip, add canola oil about 1/4" deep. Heat on medium-high. Fry chicken on one side, and flip when it becomes nicely brown.

Lightly sprinkle salt and pepper when they come out of the oil.

Mix sour cream and sriracha. Serve with chicken.
