bacon grease popcorn

Okay, this may seem either brilliant or wrong, but I found that making popcorn using bacon grease produces a nice delicate flavor. The popcorn is lightly salted, with a hint of pepper and smoke. It does NOT taste at all like bacon. And using it is kind of like recycling!

Ingredients

  • 2 tbsp bacon grease
  • 2/3 cup popcorn
  • 1 tbsp butter
  • 1 tsp kosher salt
8 quarts

Directions

Melt bacon grease in a heavy 5 quart pot with a cover over medium-high heat.

Add the popcorn, butter, and salt. Cover. Shake to distribute and return to heat. No need to keep shaking. Just let it sit there.

Remove from heat when the popping subsides (about 2-3 seconds between pops), and transfer to a large serving bowl.
