roast chicken with lemon, fresh herbs, and garlic by joanie

Another chicken, this time with fresh herbs and lemon. Think rosemary or thyme.

Ingredients

  • 4 lb chicken
  • 1 tbsp kosher or sea salt
  • 1 tsp pepper
  • 3 cloves garlic, finely chopped
  • 3 tbsp fresh herbs, finely chopped
  • 1 lemon

Directions

Preheat oven to 450ยบ.

Wash and dry the chicken inside and out. Place it breast-side up on a cast-iron skillet.

Combine the salt, pepper, garlic, herbs, and the zest of the lemon. Spread it over the chicken. Quarter the lemon and stick it in the cavity.

Place the skillet on the lowest rack in the oven and cook for about 1 hour. Keep an eye on it. If the top gets too brown, you can tent a little bit of foil on top.

Remove and let sit for 10 minutes before carving and serving.
