Ingredients

  • 1 cup all-purpose flour
  • 1 cup cake flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 cup cold butter
  • 3/4 cup buttermilk
  • Plus some butter or ghee or brushing the tops of the biscuits.

Directions

Preheat oven to 500ยบ.

Sift together both flours, baking powder, and baking soda. Mix in salt. Cut butter into pats and work it in using a pastry cutter. Stir in the buttermilk. You'll eventually need to use your hands to bring the dough together into a ball, taking care not to overwork it.

Place dough on a work surface dusted with flour. Use the heels of your palms to press it out to about 1/2-3/4" thick.

Use a biscuit cutter to cut out biscuits. (A 3" round will yield 9 biscuits.) Arrange on a parchment-lined baking sheet so that the edges of the biscuits are touching. Brush the tops of the biscuits with a little butter or ghee. Bake on the middle rack for 8-10 minutes or until golden brown to your liking.

Serve warm.
