Here's a simple recipe for turning fresh figs into a tasty filling or spread. Even my kids love this, and they normally hate figs.

Ingredients

  • 1 lb fresh black figs
  • 1/4 cup sugar
  • 1 lemon, juiced
  • 1 tsp corn starch
  • 1 tbsp water

Directions

Remove stems and cut fruit into eighths. Place in a small pot. Add sugar and lemon juice. Cook on medium heat until the figs soften and break down, occasionally stirring and mashing them with a wooden spoon, about 15 minutes. (Lower the heat to medium-low if the mixture starts to dry out.)

Mix corn starch into the water until fully dissolved. Add to fig mixture to thicken.

Remove from heat. Let cool before using.
