These rolls are good, but they're not yet great. I'm working on making them better... I got my yeast to cooperate, mainly by giving it time to warm up at the start--yes, I started to proof my instant yeast!--and letting the bread rise in an oven that had been heated to 200º. Good results, although I felt that the final product was too crunchy on the outside. Perhaps I need a lower temperature or maybe an egg wash on top?

Ingredients

  • 1 cup lukewarm water
  • 2 1/4 tsp instant yeast
  • 1 tbsp honey
  • 1 tsp kosher salt
  • 3 cups bread flour
  • 4 tbsp butter, cut into pieces

Directions

Put the water, yeast, and honey in the bowling of a standing mixer. Let sit for 10 minutes. Add salt and 2 1/2 cups of the bread flour. Stir to combine. Put the remaining flour on top and cover with plastic wrap. Set aside for 20 minutes.

Remove the plastic wrap, fit the dough hook into the standing mixer, and knead until the dough is smooth, soft, and elastic. Add butter and continue kneading until the butter is completely incorporated. Remove the bowl, cover with plastic wrap, and set aside for 20 minutes.

Preheat oven to 350º.

On a lightly floured surface, turn out the dough and knead briefly. Divide into 12 pieces. Shape each into a ball and place on a parchment-lined baking sheet. Cover with plastic wrap and set aside until doubled in size, about 30 minutes.

Remove the plastic wrap and bake until golden browned, about 25 minutes. Serve warm.
