homemade marshmallows

homemade marshmallows by joanie

I don't love marshmallows, but I delight in the idea of serving fresh ones over a cup of cocoa or as an ingredient in another recipe, such as my roasted brown rice crispy treats. So when I make them, I'm not looking to make a lot, which is why my recipe makes a more manageable 9" square of white magic. The secret is breaking the integrity of the envelope, which was both sacrilegious and liberating. Frankly, I was so fed-up with those envelopes--the contents of which don't even equate into a teaspoon or tablespoon--that I finally went out and bought unflavored gelatin in a big jar. And by "went out" I mean "shopped Amazon." No more stupid envelopes! And, yes, you should expect a few more gelatin-related recipes coming online. Let's hear it for cow collagen! Good for your joints!

BTW, after making these marshmallows, you'll have 2 egg yolks. How about making mayo! Not as an accompaniment to your marshmallows. Don't be silly.

Ingredients

  • 2 tbsp of gelatin (just over 2 envelopes)
  • 1/3 cup + 1/3 cup water
  • 1 1/3 cup granulated sugar
  • 1/3 cup light corn syrup
  • 1/2 tsp kosher salt
  • spray vegetable oil
  • 1/2 cup powdered sugar
  • 2 egg whites
36 or so cubes

Directions

Combine gelatin and 1/3 cup of water in the bowl of a standing mixer fitted with a whisk. Let sit.

In a saucepan, combine the rest of the water, sugar, corn syrup, and salt. Cook on medium heat, stirring to dissolve the sugar. Once dissolved, let cook until the mixture reaches 240ยบ.

Meanwhile, spray a 9" square baking pan with oil. Coat generously with sifted powdered sugar, reserving some for dusting the top. Set aside.

When the sugar mixture has reached the desired temperature, add it to the standing mixer. Starting on slow and working up to high, whisk together the ingredients.

Meanwhile, beat egg whites until they hold stiff peaks.

When the mixture in the standing mixer has about tripled in size (about 8 minutes), add stiffened egg whites and let whisk just until combined.

Pour mixture into prepared baking pan. Dust with powdered sugar. Let set for a few hours before cutting into bite-size pieces.

5 hours
