curry chicken salad

This is great for sandwiches and salads. Multi-purpose, and a good way to use leftovers!

Ingredients

  • 2 cups leftover roasted or rotisserie chicken
  • 1/2 cup mayonnaise
  • 2 tbsp chutney (e.g. Major Grey)
  • 1 tbsp curry powder (e.g. Madras)
  • 2 green onions, thinly sliced
  • 1 stalk celery, diced
  • 2 tbsp raisins
  • 1/2 cup whole roasted & salted cashews
  • salt and pepper to taste
about 3 cups

Directions

Chop the chicken into cubes. Set aside.

In a large bowl, whisk together the mayonnaise, chutney, and curry powder. Add the chicken, green onions, celery, raisins, and cashews. Mix well. Add salt and pepper to taste.

Refrigerate for an hour or so to let the flavors combine.
