Lazy Shopper Chocolate Cake

Let's say you're out of eggs and butter but you want to make a chocolate cake. Do not despair, here is your recipe. Plus it's vegan.

Ingredients

  • 1.5 cups flour
  • 3 T cocoa (i used scharffenberger)
  • 1 T baking soda
  • 1 C sugar
  • 1/2 t salt
  • 5 T canola oil
  • 1 T white vinegar
  • 1 t vanilla extract
  • 1/2 C cold water
  • 1/2 C cold coffee
  • (or you could use all water or all coffee)
  • I recommend topping this with a quick ganache. For mine I used 4 ghirardelli dark chocolate snack bars, 4 hersheys kisses (yup, the lazy shopper), a spoonful of coconut oil (you could also use butter or margarine) and some milk. you throw it in a pan on low heat (chocolate has a low burning point) and stir until it is melted/thickened. (This part could be vegan if you use a milk substitute.)

Directions

Preheat oven to 350F.

Mix together all the dry ingredients in the bowl of a mixer until well blended.

Make three deep holes in the dry mixture. Pour the canola oil into one, the vinegar in another and the vanilla in the third. Add the coffee and/or water and mix everything on low speed until the lumps are gone. Scrape the sides and bottom to make sure everything's blended and mix again briefly.

Pour into a 9-inch round or square pan. No need to grease it.

Bake for 20-25 minutes, until a toothpick comes out clean.
