this is an easy, fast and satisfying meal. normally i don't use pre-made pie crusts for anything, but i've discovered that it is good to keep a couple in the freezer for those times when you just can't manage to make one from scratch. the trader joe's pie crusts are perfectly fine for spinach pies and quiches and the like.

Ingredients

  • 1 pre-made pie crust (or you could get fancy and make your own pie crust.)
  • 2 bags fresh spinach
  • 1/2 yellow onion, chopped
  • 5-8 chopped mushrooms
  • 1 fennel bulb, chopped
  • 3/4 cup crumbled feta
  • 2 eggs
  • parsley
  • red pepper flakes
  • salt and pepper
  • olive oil

Directions

prep the pie crust by draping it in the pie pan and crimping the edges.

saute the onions and fennel in some olive oil until they begin to soften. add the mushrooms and saute a bit. add the spinach and some water, cook until sufficiently wilted. Add parsley and red pepper. Salt and pepper to taste.

beat the eggs, stir together with the feta, then combine with the spinach mixture, pour it all in the pie crust, and bake at 375 until the edges are brown and the pie is set, about 30 minutes.
