Stir Fry Zucchini & Black Bean

This is a quick & healthy vegetable dish to make & enjoy. It is so easy to make and taste great.

Ingredients

  • 1 large zucchini washed & sliced in section
  • 1 medium carrot (optional) washed & sliced
  • 1 handful of roasted cashews nuts
  • 1 table spoon of preserved black bean
  • 3 clovers of garlic, smashed
  • 2 table spoons of olive oil
  • black pepper
2 servings

Directions

1. turn heat to medium high & pour in oil
2. Put in garlic & wait till it turns light brown
3. Add zucchini & carrot & stir
4. Add black bean, stir & mix them well
5. It should be salty enough, no salt needed
6. Add black pepper to your taste
7. Pour the mixture into a plate
8. Spread cashew nuts over the top
