Peppermint Frosting

This frosting is a bit lumpy...but it's oh so good!

Plus it a great use for post-Xmas candy canes or those Starlight Mints they give away for free at restaurants.

Ingredients

  • 2 pounds powdered sugar (a.k.a. 2 boxes)
  • 2 sticks butter, softened (a.k.a. 1 cup)**
  • about 1/2 cup half & half or milk
  • about 1/2 cup crushed peppermint candy***
  • 2 teaspoons vanilla
  • 2 pinches of salt
  • **if your butter is still cold, you can nuke it -- one stick at a time -- in the wrapper for 10 seconds.
  • ***Place candy in a zip-lock bag and crush with something heavy...like a pestle. You can also roll it with a rolling pin.
  • ****or frosts about 2 dozen cupcakes

Directions

With your mixer, cream the butter for about 2 minutes.

Add about 1/3 to 1/2 cup of dry ingredients (not including the candy). Once incorporated, add splash of the wet ingredients -- just enough to get the texture to your desired frosting consistency. (I usually start with the vanilla then follow it with the cream.)

Repeat until all the dry ingredients are incorporated and the frosting is at your desired textured.

Set aside a few choice candy pieces for topping the cake.^ Then add the rest to the bowl and mix for about 30 seconds.

Spread on your cake (or pipe onto cup cakes) or eat it straight off the mixer blade.

NOTE: You may not use all your cream/milk...and that's okay. :o)

^ WARNING: Don't top with candy pieces of NOT eating right away. I found out the hard way, the red will eventually leach away and down your cupcake. :o( Not pretty.
