Green Beans and Chicken

This is a very salty dish. It's meant to be spooned over a big bowl of jasmine rice. My mom would make this when she was in a hurry to feed 4 hungry kids. The recipe calls for a lot of oil but you'll need a good amount of oil to make a proper "juice". Otherwise the liquid will be too thin and won't stick to the rice.

Ingredients

  • 1 chicken breast, sliced
  • 1/2 c olive oil
  • 4 cloves garlic, sliced
  • 1/2" piece of ginger, sliced
  • 1 lb green beans
  • 1 cup water
  • 1 1/4 tsp salt
  • 1 1/4 tsp soy sauce
  • 1 1/2 tsp sugar
  • pinch msg

Directions

Sautee garlic, salt, msg and ginger in hot oil til right before garlic browns. Add chicken and soy sauce, cook til chicken is done. Add green beans, water and sugar. Cover, turn heat to low and cook for 5 minutes or til green beans are tender.
