Green Tea Crepes

Green Tea Crepes by Sarah Xiong

These are crispy, japanese style crepes.

Ingredients

  • 3.7 oz bleached ap flour
  • 3 tbsp sugar
  • 3 tsp matcha powder
  • 1/4 tsp sea salt
  • 8 oz whole milk
  • 1 egg
  • 1 oz green tea ice cream or heavy cream or add more milk to thin out after resting
  • 1 oz clarified butter
  • 2 tsp vanilla extract
about 8-8" crepes

Directions

Melt butter in small microwavable bowl. Add ice cream to hot butter to melt then whisk in green tea. Whisk all ingredients together in a medium bowl. Strain with fine mesh strainer to get out lumps. Pour into a closed container and rest for at least an hour, overnight is best.

When ready to bake, put a little clarified butter in a nonstick skillet over medium heat. Hold an 8" or 10" pan up and til at a 45 degree angle. Pour a scant 2 oz ladle onto the side of the pan and quickly roll it around to make a circle, concentrating on the edges. Fry for about 1 minute on each side or til you can see the edges getting a little brown. Flip and fry for another minute.
